My first Pavlova Roll...



Easter cooking with Madi, & we made a great team producing this lovely rolly Pav.  With whipped cream, strawberries & Ron's passionfruit...divine! 
It was slightly crisp on the outside, & so smooth & fluffy inside - & I think this is the way it should have been.  I will make another one later this week!

Berry, Banana Coconut Bread


Here is my very own tried & true recipe -

Berry, Banana Coconut Bread

2 cups SR flour
2 cups coconut
1 1/4 cups caster sugar - can use brown sugar for a variation
2 cups milk - I use soy milk or cows milk & both fine, OR 1 cup milk & 1 cup light sour cream
2 eggs
1 t vanilla
1 cup mixed fresh or frozen berries
2 mashed bananas

Mix all the dry ingredients in a bowl, add eggs, milk & vanilla & stir all together.
Add fruit & stir again.

Line 2 x slice tins with baking paper, spread with batter.
Bake at 180deg C for 30 to 40 mins.

Cool & slice...yummo.

Can spread with butter, or even a dob of cream!


I make mine in slice tins, but do add to a loaf pan if you prefer.

Sweet treats!!





Christmas comes but once a year....yay! And so I cook...I love it!!
I have been madly making all sorts of little edible treats & so far the choice has been - Mini Plum Puddings, Almond & Apricot Shortbread drizzled with white or dark chocolate, Mini Fruit & Nut cakes, Rocky Road, Turkish Delight & Walnut  & Ginger Bark, Almond Blondies....

A slab of the Bark with Turkish Delight & Ginger, before I broke I into pieces, with Mini Plum Puddings in the background.

Alan's top cake!!

My brother just turned 70, & is now having fun on an OS trip...but before he left we had a whizz bang party at a lovely restaurant  & I made the birthday cake...cos I love doing that!

I made a two Caramel Mud cakes, from the AWW recipe files.  Then joined them together & covered them with White Chocolate Ganache, & also Caramel swirls.  Made a batch of patty cakes & some were iced with the ganache & the rest with caramel.

While I was deciding what cake to make I scrapped a page of Alan, & then had it converted into an edible icing from an Australian company called Custom Icing. I wasn't sure how it would turn out but it was fantastic result!    I had one rectangle icing for the cake top, & 12 patty cake toppers.

I was assured by many of the party guests that their dessert was delicious!! 

Now I have to work on a LO of the finished cake....

Cooking for a friend

Wow, our work mate Jamie & his love Kara became engaged & so I had a whirl at a Carmel Mudcake from the AWW, & what a lovely cake it turned out to be...making it was easy, just needed a little time & I have to admit it tasted yum too......
